Winemaking

We direct every step with precision and respect for tradition.

Our grapes hail from a southwest-facing terroir heavy in clay, streaked with limestone and iron, and surrounded by cherry trees that lend a distinct bitter-cherry flourish.We ferment in temperature-controlled tanks, then stop the process naturally, cooling to the perfect residual sugar level, initiating secondary frothing. Finally, the wine rests for two months on its lees in autoclaves, developing depth and finesse before bottling.
