Saint Enzo is crafted with precision and respect for tradition, nurtured by a southwest-facing terroir of heavy clay streaked with limestone and iron, and surrounded by cherry trees that lend a distinctive bitter cherry note to the wine.

Made from 100% Lambrusco Grasparossa di Castelvetro DOC, the grapes undergo a gentle 48-hour maceration on the skins at low temperatures to capture the variety’s signature fruit-forward aromas. Fermentation begins in temperature-controlled tanks and is halted naturally by lowering the temperature once the ideal residual sugar is reached for secondary frothing. The wine then rests on its own yeasts for two months in autoclaves, developing depth and finesse before bottling.
