After harvest, we macerate the grapes gently for 48 hours at low temperatures to preserve the variety’s aromatic strength.

We ferment in temperature-controlled tanks, then stop the process naturally, cooling to the perfect residual sugar level, initiating secondary frothing.

Finally, the wine rests for two months on its lees in autoclaves, developing depth and finesse before bottling.
